Science learns step-by-step, constantly refining its theories with every new discovery. It’s a long, difficult process of acquiring knowledge, but eventually it should lead to the whole truth about the universe.
Faith, on the other hand, is not something discovered by inquisitive humans. Faith is acceptance of knowledge given by someone who knows. Christian faith is accepting the testimony of the creator as revealed through his prophets and his son. Coming from God, the person who really knows, it would be foolish not to accept it, and it would be ill-advised to modify what had been revealed so that it conforms to current human understanding as is done with scientific theories.
To apply the scientific method to revealed knowledge is to constantly adjust and revise what had already been revealed correctly by God, and that would run the risk of no longer repeating what God revealed.
